MONKFISH
Poached then roasted loin of monkfish, trompetts and fennel,
pigs cheek, salt baked celeriac

RABBIT
Black pudding, filled saddle of rabbit,
herb crusted rack, toasted seeds, nuts and carrot

Breast of Goosnargh duck, pastilla of duck leg, turnip, pears and pear purée
