Chocolate Workshop with Bill McCarrick

Bill McCarrick, world class chocolatier and Academy of Chocolate member, lovingly hand crafts limited edition artisanal chocolates and pralines from his chocolate studio in Surrey. Bill launched Sir Hans Sloane Chocolate and Champagne House with the Artists collection, featuring flavours inspired by Europe’s greatest artists, including the Tahitian vanilla-seeded Gauguin, the coffee-infused Caravaggio and the almond-enriched Goya.
 
While other Chocolatiers buy factory processed couverture (the bulk material used in chocolate making) Bill uses the country’s first in-house artisanal conching machine to create small quantities of pure, bespoke prestige chocolates. By gently nurturing his chocolate lava for over 72 hours, Bill hones subtleties of taste and texture from the raw materials, allowing tantalising overtones, luxurious textures and delicate character profiles to emerge. Meticulous care and attention to detail helped Bill win gold for Best Organic Filled Dark Chocolate Bar at the 2007 World Chocolate Awards.
 
The hand crafted nature of Bill’s chocolates allow him to both excite and surprise customers, combining the traditional with newer discoveries to create chocolates with a luxurious satiny texture and sumptuousmouth feel - a truly fitting tribute to Sir Hans Sloane.
